从饮食看变迁,肉早已不是人们逢年过节才能吃上一口,而是家常餐桌上寻常可见的食材。中国每年消耗掉世界28%的可食用肉,平均每人每年食用63公斤之多。

From a rare treat to a regular staple on a dining table, meat consumption in China has increased drastically. China consumes 28% of the world’s meat. Averagely speaking, a Chinese person eats 63 kg of meat per year.

中国的食用肉市场活跃,我们的文化和历史中对肉有着抹不去的深厚情结,然而这只是冰山一角,这个庞大市场仍有着巨大的潜力等待挖掘。

Despite of the increasing number and the strong cultural traditions attached to the meat consumptions, there are still lots of things we need to know about the meat industry.

刘安望拥有13年餐饮从业经验,2003年就加入王品集团,参与王品集团大陆创业,在王品集团内地第一家店铺:王品上海仙霞店任职。

此后曾担任王品台塑牛排西单店、丰滑火锅崇光店、西堤厚牛排西直门店主厨。2007年担任华北区行政总厨。2013年担任西堤厚牛排研发总厨,全面负责西堤厚牛排品牌的菜品研发、品质升级、门店督导工作。

金光磊 Guanglei Jin

金光磊,易果集团联合创始人。

早年就职于香港上市企业和著名跨国企业负责营销,其间服务于国际顶级管理咨询公司从事市场研究工作。2000年,投身新兴的电子商务大潮,与数位行业精英共同创建了大宗品B2B翘楚“易贸资讯”。

Ben is the Marketing Director at Hunter Gatherer. Originally from New York, Ben has been living and working in China for nearly 5 years. With deep passion for clean, sustainable food and a lifelong dedication to health and wellness, Ben and his team have been working to spread the values of real food food via Hunter Gatherer’s continued expansion in Shanghai. Hunter Gatherer is a seed-to-table restaurant and marketplace with four locations in Shanghai. We own and operate two organically certified farms and work with a network of carefully curated partners and suppliers to ensure that the food we serve is 100% real. 唯宝贸易(上海)有限公司中国销售经理,负责全国的酒店,餐饮以及礼品业务。

英国中央兰开夏大学商务管理硕士学位。2010年回国后投身于酒店餐饮供应行业。 曾就职于Christofle,熟悉酒店餐饮供应链,餐具渠道市场和商业化运作,对“酒店餐具餐桌文化”有独特理解。
